Green tea is usually harvested 4 times a year, depending on the production area and manufacturing method.
April – May: The first tea crop is called “Ichiban-cha” and “Shin-cha”.
June – July: The second tea crop is called “Niban-cha”.
July – August: The third tea crop is called “Sanban-cha”.
September – October: The fourth crop called “Yonban-cha”.

The method to brew Japanese tea is a little different from other tea brewing methods because you do not use “hot boiling water” and “short brewing times”.
1. Prepare an adequate amount of water and tea leaves depending on how many people will be drinking the tea.
2. Bring the water to a full boil and then let it cool down until it reaches to 80℃ (176°F).
3. Put the tea leaves in and pour hot water into the pot and steep for 30 seconds.
4. Take turns adding tea to each cup so the strength and coloration will be similar for each serving.
